dLeña Launches “Old Ways, New Hands” Menu Ahead of National Hispanic Heritage Month

Friday August 30, 2024

Last year, dLeña creator Chef Richard Sandoval unveiled a mentorship initiative celebrating the next generation of Latin and Hispanic chefs, creators, and restaurateurs with the goal of teaching culinary and entrepreneurial skills. And from that project the “Old Ways, New Hands” menu was born! Launching Tuesday, September 3 through Monday, September 30 in celebration of National Hispanic Heritage Month, the new menu will feature items specifically crafted by the five Latin and Hispanic chef winners of Chef Sandoval’s mentorship program. Among the items available is “ají hamachi tiradito” with hamachi loin, chorizo oil, mango amarillo sauce, and lime, created by DMV-native Chef Jona Won.

The program is accepting applicants worldwide for its 2025 cohort from Sunday, September 1, through Tuesday, October 15, 2024. To learn more about Old Ways, New Hands, its 2024 mentees, and how to apply for the 2025 mentorship program, visit oldwaysnewhands.com.
